Herbed Pistachio Rice Pilaf

This smoothie is a delicious and healthy way to start your day. It is made with frozen banana, pistachio milk, dino kale, plant-based yogurt, chia seeds, and coconut flakes. The banana and pistachio milk provide a creamy base, while the kale and chia seeds add nutrients and fiber. The coconut flakes add a touch of sweetness and texture.

Ingredients

1 tablespoon Olive Oil

½ sweet onion, medium diced

1 cup brown basmati rice, rinsed well½ teaspoon salt

1 cup Three Trees Pistachio Milk

1 cup filtered water

¼ cup minced parsley (~½ bunch)

½ cup loosely packed chopped mint (~½ bunch)

½ cup shelled pistachios

¼ cup dried cranberries chopped

Directions

Heat olive oil in a large saucepan over medium high heat. Add onion, reduce heat to medium/low and cook onion until lightly browned (~10 min). Add rice and stir until onions are mixed well and rice is fully coated in oil (~15 sec). Add Three Trees milk and water to pan, bring to a boil, then reduce to a simmer and cover. Allow to cook for 40 minutes, then allow to rest, covered, for 10 minutes. Allow rice to cool, then mix in herbs, pistachios, and dried cranberriers. Serve (yields ~12-16 servings) and enjoy!
