Banana and Date-Sweetened Chickpea Granola

While most store-bought granolas tend to be laden with added sugars, this recipe relies on the natural sweetness of dates and bananas. The addition of chickpeas to the mix and a generous pour of Vanilla Almond milk help raise the overall protein content in your breakfast. Simply top with your favorite seasonal fruit for a colorful and hearty start to your day.

Ingredients

6 servings

2.5 cups rolled oats

1 old banana, mashed

1/2 cup medjool dates

1/2 cup cooked chickpeas

¼ cup virgin coconut oil, melted

1 tsp vanilla extract

¼ tsp ground green cardamom

¼ tsp ground nutmeg

½ tsp ground cinnamon

¼ tsp ground cloves

½ tsp himalayan pink salt

Directions

Preheat oven to 350 degrees.

Blend dates in a food processor into a thick paste. Add chickpeas, banana, coconut oil, spices, and salt and blend again until smooth.

In a large bowl, combine rolled oats with chickpea-date mixture. Add to a lined baking sheet with parchment paper and spread out into a single, even layer. Make sure they aren't overcrowded.

Bake for 15 minutes. Toss granola and bake for another 10 minute, or until golden brown. Let cool.

Serve with Three Trees Vanilla Almond Milk and fresh fruit right before eating.
